berry berry delicious.

i know, i know.
it's getting a little outta control.
{but its not like i had any of the cake left over.}
and when baking queen miss katie comes over on a rainy day, baking and 30 rock is basically perfection. {all i needed was a certain someone to confess their undying love to me. and when i say "certain" i mean michael cera, the buble, robert pattinson, anyone from phoenix or vampire weekend, sufjan stevens, or any of the guys from the buried life. hmm... what can i say?}

basically we open up the million of recipes we have saved or seen or drooled over and decide what to bake! and the first one that we have all the ingredients for is THE WINNER! {we can't be bothered to go to the grocery store whilst in baking mode!} although when we stumbled across these berry cobbler pie bars from joy the baker it looked so heavenly that we knew no matter what we had to make them! luckily i had stocked up on frozen berries. so INSANT SUCCESS!


these bars are absolute summer perfection. they are just that fruity and fresh combination that you want to enjoy on a summer night after a day playing in the sun. enjoy with a scoop of ice cream or freshly made whipped cream and you've got epic deliciousness. and i'll definitely be saving this recipe for the 4th of july where these cobbler bars are the definition of true patriotism.

we made a few adjustments. swapped lemon zest for orange and sour cream for butter milk+butter combo simply because i didn't have those things. but for the topping i added brown sugar and cinnamon. because really you can never go wrong with cinnamon. {but really, i add cinnamon to about EVERYTHING i make. and as katie as my witness... she's seen the cinnmon action firsthand. its love. or an unhealthy addiction. whateves}
BERRY
COBBLER BARS

{a la JOY}
Crust and Topping
3 cups all-purpose flour
1 1/2 cups sugar
1/4 tsp salt
1 1/2 cups chilled unsalted butter {cut into cubes}
zest of two oranges
1 Tbs cinnamon {for topping}
1/2 cup brown sugar {for topping}

Berry Filling
4 large eggs
2 cups sugar
1 cup sour cream
3/4 cup all-purpose flour
pinch of salt
2 (16-ounce) packages frozen mixd berries {or 6 cups of fresh berries}

To make the crust and topping-
Preheat the oven to 350 degrees F. Grease a half sheet baking pan {12×17-inch} with butter or cooking spray and set aside. If you use a 9×13-inch baking pan you’ll have thicker bars. Zest two lemons. Measure out the sugar onto a clean work surface. Rub the orange zest into the sugar with a bench scraper or the back of a spoon. Combine zest, sugar, flour, salt and butter in an electric mixer fit with a paddle attachment. Beat the ingredients on medium speed until the mixture looks dry and crumbly.Reserve 1 1/2 cups of the crust mixture to use as the topping. Press the remaining mixture into the bottom of the pan. Bake the crust for 12 to 15 minutes until it is golden brown. Let cool for 10 minutes while you make the filling. For the topping, add brown sugar and cinnamon.

To make the filling-
Whisk the eggs in a large bowl. Add the sugar, sour cream, flour and salt. Gently fold in the berries. Spoon the mixture evenly over the crust. You may have to distribute the berries evenly around.Sprinkle the reserved crust mixture evenly over the filling. Bake for 45 to 55 minutes until the top is lightly browned. Cool for 1 hour before slicing.

  8. mmmmm looks delicous, do you know magic cookie bars? Those are really good too. I used to buy them from AJ's fine food store and nearly died over them so I learned how to make them myself. For some reason they popped into my head the other day and I've been craving them ever since. Talking about them now is making me hungry :D
