luscious lemon bars.

with summer a mere 10 days away i've caught myself daydreaming more than once-the ice cream man, playing with chalk, flowy dresses, drinking kool-aid 24/7, forgetting to was my hair, going to bed at 5am, waking up at 1, trashy tv {think tough love or the rock of love. vh1 why do you do this to me!?}, board games, no shoes, old school sleepovers, watermelon, sunglasses, cook outs, and ALL THINGS LEMON! {lemonade stands, liz lemon, diet coke with lemon, LEMON BARS!}
to me lemon bars are the perfect summer treat. so light and fresh, with the first bite i pretend i'm in southern california wearing this dress while michael buble whispers sweet nothings to me... mmkay yeah, so they are ridiculously delicious. {plus they feed my current baking obsession with all things citrus!}

while whisking and cracking away i had this song on repeat. dreaming about summer love and riding bicycles. its the perfect lemon bar baking song. {okay its the perfect song for anything. and i haven't stopped listening to it for two months!}

LEMON BARS
  • Ingredients:
    1/2 pound unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 2 cups flour
  • 1/8 teaspoon kosher salt
    6 extra-large eggs at room temperature
    3 cups granulated sugar
    2 tablespoons grated lemon zest (4 to 6 lemons)
    1 cup freshly squeezed lemon juice
    1 cup flour
    Confectioners' sugar, for dusting

  • Preheat the oven to 350 degrees F.
    For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill. Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
    For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature. Cut into triangles and dust with confectioners' sugar.

    Once again, these look AMAZING! And I bet the tastable treat is even more delicious than this visual one!

  13. i never ever cook, and even less often than i cook i bake (ironic that i'm going to be the sweets baker at great harvest this summer), but i'm actually going to try these cause i LOVE LEMON BARS. as far as paulie bleeker sitch goes--still haven't actually met him for real...sad, i know. i'm hoping fate will somehow bring us together at some point this summer.

  19. I have my Aunt's lemon bar recipe that won at the state fair in 1982. They are the perfect summer stand by!

    BUT I always end up inhaling powdered sugar when i eat them. I just get too excited!

  21. i adore anything lemon flavored. i used to work at a craft store where they would put out snacks on scrapbooking nights, and i would have the hardest time not munching on the lemon bars during my entire shift. so good!

  34. oh that is a happy song!!! so sweet. i'm trying not to bake these days, because i often attempt a task and soon find myself staring off in the distance day dreaming, not realizing smoke pouring out of my oven and the fire alarm ringing and firemen breaking down my door. but you know, there's a lot to daydream about. :)
